Ingredients:

– 1 lb (450g) of filo pastry
– 2 cups (500ml) of milk
– 1 cup (250g) of feta cheese, crumbled
– 1/2 cup (100g) of ricotta cheese
– 1/4 cup (50g) of olive oil
– 1 teaspoon of salt
– 1 teaspoon of black pepper
– 1/2 teaspoon of nutmeg
– 1/2 teaspoon of allspice
– 1/2 teaspoon of paprika
– 1/4 teaspoon of turmeric
– 1/4 teaspoon of ground cumin
– 1/4 teaspoon of ground coriander
– 1/4 teaspoon of ground cinnamon
– 1/4 teaspoon of cayenne pepper (optional)
– 1/4 cup (60ml) of water
– 1/4 cup (60ml) of vegetable oil or butter for greasing the pan

Instructions:

1. Preheat your oven to 375°F (190°C).
2. Grease a baking dish with vegetable oil or butter.
3. In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
4. Add the milk to the saucepan and bring it to a simmer. Reduce the heat to low and let it simmer for 10 minutes, stirring occasionally.
5. In a separate bowl, mix the feta cheese, ricotta cheese, salt, black pepper, nutmeg, allspice, paprika, turmeric, ground cumin, ground coriander, ground cinnamon, and cayenne pepper (if using) together.
6. Once the milk has simmered for 10 minutes, gradually add the cheese mixture to the saucepan, stirring constantly to prevent lumps from forming.
7. Continue to cook the mixture for another 5 minutes, stirring frequently, until it thickens.

9. Lay out a sheet of filo pastry on a clean, flat surface. Brush it with a little vegetable oil or butter.
10. Place another sheet of filo pastry on top of the first one, brushing with oil or butter as well.
11. Repeat the process until you have a stack of 6 to 8 sheets of filo pastry.
12. Spread a thin layer of the cheese mixture on top of the filo pastry stack.
13. Starting from one end, roll the filo pastry stack into a tight log.
14. Place the log into the greased baking dish, seam side down.
15. Repeat the process with the remaining filo pastry and cheese mixture, placing each log on top of the previous one.
16. Once all the filo pastry logs are in the baking dish, brush the top with a little vegetable oil or butter.
17. Pour the remaining cheese mixture over the top of the filo pastry logs.
18. Bake in the preheated oven for 30 to 40 minutes, or until the burek is golden brown and crispy.
19. Remove from the oven and let it cool for a few minutes before serving.
